I'm a legal writer, with most of my work coming in the form of online copywriting. AI *devastated* my field last year but since then all of my clients have returned. AI just sucked, and they realized it. Will AI continue to suck? Probably not, and I'm worried enough to diverse my portfolio.

And your rates? Raise them. If your current rate is not sustainable, what do you have to lose? I think you'll be surprised what will happen. I charge 0.18/word, triple what I charged at first, 10 years ago. I've found that I have fewer clients, less work, and more income. It'll also probably make you perform better, as you become more willing to put in the extra time.
